Creamy Chicken Schnitzel

  • 2 chicken breasts, cut in half lengthways
  • 1 tsp salt flakes
  • 1/4 tsp pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/4 cup plain/all-purpose flour
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tbsp garlic, freshly minced
  • 1/2 cup chicken stock
  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • 1/2 cup Parmesan cheese
  • Salt and pepper, to taste
  • Mashed potatoes, steamed rice, or pasta (for serving)
  • Steamed greens (for serving)
  • 1 tbsp parsley, finely chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Season the chicken schnitzels by coating both sides with salt, pepper, paprika, onion powder, and dried thyme.
  2. Dredge each schnitzel in flour to create a crispy layer.
  3. Heat olive oil and unsalted butter in a frying pan over medium heat until melted.
  4. Cook schnitzels in the pan for 3-4 minutes on each side until golden brown and cooked through, then keep warm.
  5. Add minced garlic to the pan, sauté for 1 minute until fragrant.
  6. Pour in the chicken stock to deglaze the pan, scraping up any flavorful bits.
  7. Stir in thickened cream and Dijon mustard, cooking until the sauce thickens.
  8. Add grated Parmesan cheese, mix until melted, and adjust seasoning with salt and pepper.
  9. Serve schnitzels on plates, drizzling creamy sauce over the top with sides of mashed potatoes, rice or pasta, and steamed greens.
  10. Garnish with parsley and serve with lemon wedges for a zesty touch.
