Pumpkin Sage Pasta

This creamy pumpkin sage pasta brings cozy fall flavors together in under 30 minutes. Rich pumpkin sauce, fresh sage, and Parmesan create a comforting, elegant dish that’s as simple as it is delicious.

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can pumpkin puree
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream or full-fat coconut milk
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons fresh sage, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces pasta of your choice

Instructions

  1. Cook pasta in salted water according to package directions until just shy of al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 5 minutes until translucent.
  3. Add garlic and cook 1 minute more, stirring constantly.
  4. Stir in pumpkin puree, vegetable broth, heavy cream (or coconut milk), and Parmesan if using. Mix until smooth.
  5. Add chopped sage, salt, and pepper. Simmer on low heat for 5–7 minutes, stirring occasionally, until slightly thickened.
  6. Add drained pasta to the skillet and toss with the sauce. Add reserved pasta water a little at a time if needed to loosen the sauce.
  7. Serve hot, topped with extra Parmesan and crispy sage leaves if desired.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Omit Parmesan for a vegan version. Best served fresh, but leftovers can be stored for up to 3 days and reheated with a splash of cream or broth.
