Creamy Smothered Chicken and Rice

A delightful dish combining savory flavors with comfort, featuring seasoned chicken and fluffy rice in a creamy sauce.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Heat olive oil in a large skillet and sear chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. In a medium saucepan, cook rice with chicken broth and salt until tender, about 15 minutes.
  4. Make the creamy sauce by melting butter, whisking in flour, then slowly adding milk and chicken broth until thickened.
  5. Stir in cheeses, garlic powder, and thyme. Return chicken to the skillet and simmer for 5-7 minutes.
  6. Serve over fluffy rice and garnish with parsley.

Notes

For leftovers, store in an airtight container in the fridge for 3-4 days. Reheat with a dash of water to keep the sauce creamy.
