Crock Pot Bourbon Chicken

A delicious and easy dish made with tender chicken thighs in a sweet and tangy bourbon sauce, perfect to serve over rice.

Ingredients

  • Chicken Thighs (boneless, skinless, 3 lbs)
  • Light Brown Sugar (1 cup)
  • Soy Sauce (1 cup)
  • Bourbon Whiskey (⅓ cup; or substitute apple juice or chicken broth)
  • Apple Cider Vinegar (2 tbsp)
  • Ground Ginger (½ tsp)
  • Honey (1 tbsp)
  • Red Pepper Flakes (½ tsp)
  • Garlic Cloves (4, minced)
  • Cornstarch (3 tbsp)
  • Water (2 tbsp)
  • Green Onions (¼ cup, chopped for garnish)

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, whisk together soy sauce, brown sugar, bourbon (or substitute), apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
  3. Pour the sauce over the chicken. Cover and cook on HIGH for 240 minutes (4 hours) or LOW for 360 minutes (6 hours).
  4. Once cooked, remove the chicken from the slow cooker, shred or chop it, and set aside.
  5. Mix cornstarch with water in a small bowl and stir into the sauce in the slow cooker. Let it simmer until thickened.
  6. Return the chicken to the Crock Pot and coat it with the sauce.
  7. Garnish with green onions and serve over rice.

Notes

Serve over rice or in lettuce wraps for a low-carb option. This dish can be customized with additional vegetables or spices.
