Crock Pot Bourbon Chicken

A flavorful slow-cooked dish combining tender chicken thighs with a rich, sweet, and slightly spicy bourbon sauce.

  • 3 lbs boneless, skinless chicken thighs
  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup bourbon whiskey (or substitute apple juice or chicken broth)
  • 2 tbsp apple cider vinegar
  • ½ tsp ground ginger
  • 1 tbsp honey
  • ½ tsp red pepper flakes
  • 4 garlic cloves, minced
  • 3 tbsp cornstarch
  • 2 tbsp water
  • ¼ cup green onions, chopped (for garnish)

Instructions

  1. Place the chicken thighs in the slow cooker evenly at the bottom.
  2. In a mixing bowl, whisk together the soy sauce, brown sugar, bourbon (or substitute), apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic until combined.
  3. Pour the sauce over the chicken thighs, ensuring they are well coated.
  4. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  5. Remove the chicken thighs and shred into bite-sized pieces.
  6. Mix cornstarch with water until smooth and stir into the sauce, simmer until thickened.
  7. Add the shredded chicken back into the crock pot, toss to coat with the sauce.
  8. Garnish with chopped green onions and serve over rice.

Notes

Serve over cooked rice for best flavor absorption. Leftovers can be stored for 3-4 days in the refrigerator, or frozen for up to 3 months.
