Crock Pot Swamp Potatoes

A simple and tasty meal combining potatoes, smoky sausage, and green beans in a slow cooker for a delightful comfort food experience.

  • 2 lbs yellow potatoes, scrubbed and quartered
  • ½ cup yellow onion, diced
  • 12 oz smoked sausage, sliced
  • 2 cans (14.5 oz each) cut green beans, drained
  • 1 stick (½ cup) unsalted butter
  • 1 packet (0.6 oz) Italian dressing seasoning mix
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (or regular paprika)

Instructions

  1. Prepare the Potatoes: Wash and quarter the yellow potatoes, then place them in the bottom of the slow cooker.
  2. Season the Potatoes: Sprinkle potatoes with salt, pepper, garlic powder, onion powder, and smoked paprika. Toss gently.
  3. Add Onions: Mix in the diced yellow onions.
  4. Layer the Sausage: Lay sliced smoked sausage on top.
  5. Add Green Beans: Drain and layer green beans on top of the sausage.
  6. Top with Seasoning: Sprinkle Italian dressing seasoning over the mixture.
  7. Add Butter: Place the stick of unsalted butter on top without stirring.
  8. Cook: Cover and cook on Low for 6-7 hours or High for 3-4 hours until fork-tender.
  9. Stir and Serve: Stir together after cooking and serve warm.

Notes

Consider pairing with crusty bread or additional vegetables. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
