Crockpot White Chicken Chili with Cream Cheese

A warm and comforting white chicken chili that’s creamy, flavorful, and easy to make in a slow cooker.

  • 1 lb shredded boneless skinless chicken breasts
  • 8 oz cream cheese
  • 1 cup corn
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 4 cups chicken broth
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a crockpot, combine shredded chicken, corn, black beans, diced tomatoes, and savory seasonings.
  2. Add cream cheese on top.
  3. Pour in chicken broth until the ingredients are covered.
  4. Cover and cook on low for 360-420 minutes or high for 180-240 minutes.
  5. Before serving, shred the chicken in the pot and stir everything together.
  6. Adjust seasonings to taste and serve warm.

Notes

Serve with shredded cheese, sour cream, tortilla chips, or chopped cilantro. Great with cornbread or over rice.
