  • 1 large cucumber, peeled and roughly chopped
  • ½ cup fresh mint leaves
  • ¼ cup fresh lime juice (from 23 limes)
  • 4 cups cold water, divided
  • 12 tablespoons agave nectar or sweetener (optional)
  • Ice cubes, for serving
  • Thin cucumber ribbons and mint sprigs, for garnish

Instructions

  1. Peel and chop cucumber into chunks. Rinse and dry mint leaves. Juice the limes and strain out seeds.
  2. In a blender, combine cucumber, mint, lime juice, and 2 cups of cold water. Blend on high until smooth and frothy.
  3. Strain the mixture through a fine-mesh sieve into a pitcher, pressing to extract all liquid. Discard pulp.
  4. Stir in the remaining 2 cups of cold water and sweetener if using. Taste and adjust flavors as desired.
  5. Refrigerate for at least 1 hour. Serve over ice and garnish with cucumber ribbons and mint sprigs.

Notes

Use the freshest ingredients for best flavor. Spearmint is milder and more refreshing than peppermint. Make it ahead and chill for a few hours for maximum flavor. Don’t skip straining – it creates the smooth agua fresca texture. Adjust sweetness to taste or skip entirely for a sugar-free version.
