Curried Chicken Lentil and Rice Soup with Spinach

A warm and comforting soup packed with tender chicken, healthy lentils, and fragrant spices, perfect for chilly days.

  • 1 lb chicken breast, diced
  • 1 cup lentils, rinsed
  • 1 cup rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery, and sauté until softened.
  2. Stir in the curry powder and ginger, cooking for an additional minute.
  3. Add the diced chicken to the pot, cooking until browned.
  4. Stir in the lentils, rice, and chicken broth. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until lentils and rice are tender.
  5. Add fresh spinach and stir until wilted.
  6. Season with salt and pepper to taste. Serve hot.

Notes

This soup is great for meal prep and can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
