Dark Chocolate Raspberry Truffle Cake

A delightful dessert combining rich chocolate flavors with fresh raspberries, perfect for any occasion.

  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup yogurt (or sour cream)
  • 1/2 cup hot water (or coffee)
  • 1 cup raspberry puree (or jam)
  • 200 g dark chocolate
  • 1 cup cream

Instructions

  1. Preheat your oven to 340°F (170°C) and grease your baking pan.
  2. In a mixing bowl, combine the flour, cocoa powder, baking soda, salt, and sugar. Mix well.
  3. Add the vegetable oil, eggs, vanilla extract, and yogurt to the dry ingredients, and mix until combined.
  4. Slowly pour in the hot water or coffee and mix until the batter is smooth and glossy.
  5. Pour the batter into your prepared baking pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely.
  6. In a saucepan, heat the cream until it’s just about to boil, then pour it over the chopped dark chocolate. Allow it to sit for a couple of minutes, then stir until smooth to create the ganache.
  7. Once the cake is cooled, spread the raspberry puree over the top, then pour the ganache on top of the raspberries. Let this set before serving for richer flavors.

Notes

For a healthier serving option, cut the cake into smaller portions. Pair with Greek yogurt or low-sugar ice cream.
