Date Coffee Loaf Cake with Walnuts and Rich Espresso Glaze

  • 1 1/2 cups dates, pitted and chopped
  • 1 cup hot brewed coffee
  • 1 3/4 cups all-purpose flour
  • 1/2 cup walnuts, chopped
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon espresso (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the chopped dates and hot brewed coffee in a bowl; let it sit for 15 minutes.
  3. Mix together the flour, walnuts, baking soda, and salt in another bowl.
  4. Cream together the sugar and butter in a separate large bowl until light and fluffy. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  5. Add the date and coffee mixture to the butter mixture and mix until combined.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Let the cake cool for 10 minutes, then remove from the pan.
  9. Mix powdered sugar with espresso for the glaze until smooth, then drizzle over the cooled loaf cake.
