Batch Cooked Chicken Breast for Salads

Juicy and flavorful chicken breast, perfect for salads and meal prep.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Olive oil
  • Fresh lemon juice
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • Dried oregano or Italian seasoning (optional)

Instructions

  1. Pat dry the chicken breasts and place them in a bowl.
  2. Toss with olive oil and lemon juice.
  3. Sprinkle generously with salt, pepper, garlic powder, smoked paprika, and herbs if using.
  4. Space chicken breasts out on a parchment-lined baking tray.
  5. Bake in a preheated oven at 425°F for 18 to 22 minutes, or until juices run clear.
  6. Let the chicken rest under foil for at least 5 minutes before slicing.

Notes

Marinate for at least 20 minutes for extra flavor. Slice against the grain for tender pieces and do not overcook to prevent dryness.
