Chicken and Peach Skewers

Delicious grilled chicken and peach skewers, perfect for summer cookouts.

Ingredients

  • 1 lb chicken breast, cubed
  • 2 peaches, sliced
  • 1/4 cup olive oil
  • 2 tbsp honey
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a bowl, whisk together olive oil, honey, lemon juice, garlic, rosemary, salt, and pepper.
  2. Add the cubed chicken to the marinade and mix well. Cover and refrigerate for at least 1 hour, or longer for optimal flavor.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken and peach slices alternately onto skewers.
  5. Brush the grill grates with oil to prevent sticking.
  6. Place the skewers on the grill and cook, turning every couple of minutes, until the chicken is fully cooked and has good grill marks, about 10-15 minutes.
  7. Remove from the grill and serve warm.

Notes

For creative variations, try swapping peaches for plums or nectarines. You can also add bell peppers or red onions for extra crunch.
