The Most Delicious Chocolate Cheesecake with Ganache

A rich, creamy chocolate cheesecake topped with a glossy ganache, offering indulgence and a lighter option for dessert.

  • 24 Oreo cookies
  • 1/4 cup melted butter
  • 2 cups chocolate chips
  • 3/4 cup cream (set aside)
  • 680 g cream cheese (at room temperature)
  • 1 1/2 cups sugar
  • 1/4 cup cocoa powder
  • 5 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate chips (for ganache)
  • 3/4 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 325°F (165°C) and grease your springform pan.
  2. Crush the Oreo cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust for about 10 minutes and allow it to cool.
  4. Melt 1/4 cup of cream and 2 cups of chocolate chips in a saucepan over low heat, stirring until smooth. Set aside to cool.
  5. Whip the cream cheese until smooth. Gradually add sugar and cocoa powder, mixing well.
  6. Add eggs one at a time, mixing well after each addition, then fold in the remaining cream.
  7. Pour in the melted chocolate and vanilla extract, mixing until well combined.
  8. Pour the chocolate cheesecake filling into the cooled crust, smoothing the top.
  9. Bake for about 70 minutes, allowing the center to jiggle slightly when done.
  10. Cool the cheesecake to room temperature, then chill in the refrigerator for at least 4 hours or overnight.
  11. Prepare the ganache by melting 1 1/2 cups of chocolate chips with 3/4 cup of heavy cream in a saucepan, stirring until smooth. Pour the ganache over the cooled cheesecake and let it sit for about 15 minutes before serving.

Notes

Store in the refrigerator covered with plastic wrap for up to a week. Can be frozen for up to a month.
