Classic Macaroni Salad

A simple and delicious macaroni salad that’s perfect for potlucks and summer gatherings.

Ingredients

  • 2 cups elbow macaroni
  • 1/2 red bell pepper, chopped
  • 1 celery stalk, chopped
  • 1/4 red onion, chopped
  • 2 dill pickles, chopped
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickle juice
  • 1 pinch sugar
  • Salt and black pepper, to taste
  • Optional: diced hard-boiled eggs or shredded cheese

Instructions

  1. Boil the elbow macaroni until al dente. Drain and rinse under cold water until cool.
  2. Chop the red bell pepper, celery, red onion, and dill pickles.
  3. In a bowl, stir together the mayonnaise, yellow mustard, pickle juice, sugar, salt, and black pepper to make the dressing.
  4. In a large bowl, combine the cooled pasta, chopped veggies, and any optional extras.
  5. Pour the dressing over the pasta mixture and mix well.
  6. Let the salad chill in the fridge for at least one hour before serving.

Notes

For added flavor, let the salad sit in the fridge for a couple of hours or overnight. Adjust the dressing based on preference, as macaroni salad absorbs it over time.
