Mini Quiches with Spinach and Feta

Delicious and easy Mini Quiches filled with spinach and feta, perfect for brunch or as a handheld snack.

Ingredients

  • 1 store-bought pie crust or puff pastry
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1 cup fresh spinach or 1/2 cup frozen spinach (thawed and drained)
  • 1 cup feta cheese (crumbled)
  • Salt, to taste
  • Pepper, to taste
  • Pinch of nutmeg
  • Onion (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roll out the crust and cut circles to fit the mini muffin pan.
  3. Press the crust into the mini muffin tin.
  4. In a mixing bowl, whisk together eggs, milk, salt, and nutmeg.
  5. Stir in chopped spinach and crumbled feta.
  6. Fill each crust carefully, avoiding overfilling.
  7. Bake for 18-22 minutes until the tops are puffed and golden.
  8. Let cool for 5 minutes, then gently remove from the tin with a butter knife.

Notes

Experiment with different cheeses or add-ins like sundried tomatoes or diced bell peppers for a flavor twist.
