Avocado Lime Popsicles

Creamy and tangy avocado lime popsicles that are perfect for hot summer days. Easy to make and healthy!

Ingredients

  • 2 ripe avocados
  • 1/2 cup fresh lime juice
  • 1/4 cup honey or agave (adjust to taste)
  • 1 cup coconut milk (or any milk of choice)
  • Pinch of salt
  • Optional: lime zest and mint leaves

Instructions

  1. Split the avocados and scoop them into a blender.
  2. Add fresh lime juice, honey, coconut milk, and a pinch of salt.
  3. Blend until smooth, then tap the bowl on the counter to remove air bubbles.
  4. Pour the mixture into popsicle molds and freeze for at least 4 hours.
  5. To unmold, run the molds under warm water for a few seconds.

Notes

Feel free to swap the sweetener for maple syrup or adjust the sweetness to taste. These pops can also be made with other fruits like blueberries or mango for different flavors.
