Dragonfruit Lemonade

This Dragonfruit Lemonade is a vibrant, naturally pink twist on the classic summer drink. Made with fresh lemon juice, dragon fruit puree, and simple syrup, it’s the perfect refreshing treat for backyard parties, kids’ birthdays, or a sunny afternoon pick-me-up.

Ingredients

  • 1 pink dragon fruit, puréed (or ¾1 cup dragon fruit puree)
  • 1 cup fresh lemon juice (from about 68 lemons)
  • ½ cup simple syrup (see notes)
  • 4 cups cold water
  • Ice cubes
  • Lemon wheels and dragon fruit cubes, for garnish

Instructions

  1. Cut dragon fruit in half and scoop out the flesh. Blend until completely smooth.
  2. Juice lemons until you have 1 cup of juice, straining out any seeds.
  3. In a pitcher, combine dragon fruit puree, lemon juice, and simple syrup. Stir well.
  4. Add cold water and mix until fully combined.
  5. Chill in the refrigerator for at least 30 minutes.
  6. Serve over ice, garnished with lemon slices and dragon fruit cubes.

Notes

To make simple syrup: Combine ½ cup sugar and ½ cup water in a small saucepan. Heat until sugar dissolves, then cool. Adjust sweetener to taste. For a fizzy version, replace half the water with sparkling water. Store leftover lemonade in the refrigerator for up to 2 days.
