Dubai-Style Chocolate Pistachio Cake

A delightful dessert combining rich chocolate and pistachios, perfect for special occasions or as a healthier sweet treat.

  • 2 cups flour
  • 3/4 cup cocoa powder
  • 1 3/4 cups sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 cup hot water/coffee
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cardamom
  • 1 teaspoon vanilla
  • 1 cup cream
  • 1/2 cup powdered sugar
  • 1/2 cup ground pistachios
  • 200 g dark chocolate

Instructions

  1. Preheat the oven to 340°F (170°C). In a mixing bowl, mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, salt, and cardamom.
  2. Add the eggs, vegetable oil, milk, and vanilla extract to the dry ingredients. Then slowly pour in the hot water or coffee while mixing until combined and smooth.
  3. Pour the batter into a prepared baking pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  4. While the cake is cooling, whip the cream until soft peaks form. Add the powdered sugar and ground pistachios, then mix to combine.
  5. For the ganache, heat the cream until hot but not boiling. Pour the hot cream over the dark chocolate in a bowl. Stir until smooth and completely melted.
  6. Once the cake has cooled, cut it in half horizontally. Spread the whipped cream mixture evenly on the bottom half, place the top half back on, and pour the ganache over the top.
  7. Sprinkle with crushed pistachios for garnish and serve.

Notes

This cake can be stored in an airtight container at room temperature for up to three days. For longer storage, freeze individual slices wrapped in plastic wrap.
