Earl Grey Biscotti

Delightful Italian biscotti infused with the floral notes of Earl Grey tea, perfect for dunking in tea or coffee.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/3 cup unsalted butter, softened
  • 2 eggs
  • 1/4 cup boiling water
  • 3 tea bags, Earl Grey blend
  • 1/3 cup slivered almonds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Tear open the tea bags, pour the tea leaves into a small bowl, and stir in the boiling water. Set this mixture aside to steep.
  3. In another bowl, combine the flour, baking soda, and salt. Set this mixture aside as well.
  4. In a large mixing bowl, beat together the sugar and unsalted butter until creamy and smooth.
  5. Beat in the eggs one at a time, mixing well after each addition. Then mix in the Earl Grey tea water.
  6. Slowly add the flour mixture to the wet ingredients. Stir until just combined, then gently fold in the slivered almonds.
  7. Shape the dough into a log, about 6 inches wide and 12 inches long. Place it on a lined cookie sheet.
  8. Bake for 20 minutes, or until lightly golden and firm to the touch.
  9. Allow the log to cool for 5 minutes. Once slightly cool, carefully cut the log diagonally into 1-inch thick slices.
  10. Return the slices to the oven and bake for an additional 20 minutes until they are golden brown and crisp.
  11. Cool on a wire rack. Brew a pot of tea (or coffee) and enjoy your lovely biscotti!

Notes

Store in an airtight container at room temperature for up to two weeks. Can be frozen for up to three months.
