  • 1 lb baby potatoes, halved
  • 1/2 lb green beans, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 teaspoons fresh thyme (or 1 tsp dried)
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 quarter boneless ham, sliced (approx. 2 lbs)
  • 1 (20 oz) can sliced pineapple, drained
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • Optional: Grated Parmesan, lemon zest, red pepper flakes, fresh rosemary, sliced red onions

Instructions

  1. Preheat oven to 450°F and grease or line a large sheet pan.
  2. Arrange halved potatoes on one third of the pan, green beans in the center, and alternating ham and pineapple slices on the last third.
  3. Mix olive oil, garlic, thyme, onion powder, salt, and pepper. Drizzle over veggies and toss to coat.
  4. In a small saucepan, whisk honey, brown sugar, vinegar, and Dijon mustard. Simmer 2–3 minutes until slightly thickened.
  5. Brush or spoon glaze generously over ham and pineapple.
  6. Bake for 25–30 minutes until potatoes are fork-tender and ham edges are caramelized. Optional: broil final 2 minutes for extra color.
  7. Garnish with optional additions like Parmesan, lemon zest, or rosemary before serving.

Notes

Prep the glaze and vegetables a day ahead for quicker cooking. Swap in asparagus, Brussels sprouts, or carrots for seasonal variety. Leftovers freeze well and reheat beautifully.
