Easy Ground Beef Bulgogi

A quick and flavorful Korean-inspired dish using ground beef, perfect for weeknight dinners.

  • ¼ cup soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon brown sugar (plus 2 teaspoons, divided)
  • 2 teaspoons sesame oil
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon fresh garlic, minced
  • 1 pound ground beef
  • ½ small yellow onion, diced
  • 1 tablespoon scallion, diced
  • 1 teaspoon sesame seeds
  • 4 large soft-boiled eggs (for serving)

Instructions

  1. In a small bowl, whisk soy sauce, rice wine vinegar, 1 tablespoon brown sugar, sesame oil, ginger, and garlic. Stir until the sugar dissolves. Set aside.
  2. In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Drain excess grease if necessary.
  3. Stir in diced onion and cook for 2–3 minutes until softened.
  4. Pour the sauce over the beef and onion mixture. Add the remaining 2 teaspoons brown sugar. Stir well and simmer for about 5 minutes until slightly thickened.
  5. Remove from heat. Garnish with scallions and sesame seeds. Serve hot with rice or your favorite sides. Add soft-boiled eggs for richness.

Notes

Use fresh ingredients for the best flavor. Adjust sweetness and add veggies to your liking.
