Easy Lemon Cheesecake Overnight Oats

A delightful breakfast that tastes like dessert, made with oats, Greek yogurt, and zesty lemon.

  • 1 cup Greek yogurt
  • 1 cup milk (dairy or plant-based)
  • 2 tablespoons honey or maple syrup (optional)
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • Optional: chopped nuts, chia seeds, or flax seeds

Instructions

  1. In a bowl or jar, combine oats, Greek yogurt, and milk.
  2. Add honey or maple syrup if desired, and mix well.
  3. Stir in lemon zest and lemon juice until fully incorporated.
  4. If using, fold in any optional ingredients like nuts or seeds.
  5. Cover and refrigerate overnight (or for at least four hours) to allow the oats to soak.
  6. In the morning, give the oats a good stir and enjoy cold, or add a splash of milk if too thick.

Notes

Add fresh berries or granola in the morning for extra texture. Can be stored in the fridge for up to 3 days.
