Easy Pink Beet Latte

A vibrant and nutritious latte made with earthy beetroot, warm spices, and creamy non-dairy milk.

Ingredients

  • 1 small beetroot
  • 1/4 inch fresh ginger
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 1/2 cup unsweetened non-dairy milk (e.g., almond)
  • 1 tsp raw honey or maple syrup (optional)

Instructions

  1. Prepare the beetroot by placing it in a saucepan covered with water. Bring to a boil, then simmer for 30 minutes until soft. Drain, cool, and peel the skin.
  2. In a blender, combine the peeled beetroot, fresh ginger, vanilla extract, and ground cinnamon. Blend until smooth, about 5 minutes.
  3. In another saucepan, heat the non-dairy milk over medium heat until it simmers, then remove from heat.
  4. Pour half a cup of heated milk into the blender with the beet mixture and blend again until smooth.
  5. Froth the remaining milk using a frother or by blending until foamy.
  6. Combine the foamed milk with the beet mixture in a mug, stirring gently.
  7. Add honey or maple syrup to taste, and enjoy your latte!

Notes

Serve warm or at room temperature. Best enjoyed fresh but can be refrigerated for a day.
