Easy Slow Cooker Chicken Pot Roast

A simple and hearty dish that combines a tender chicken with flavorful vegetables, perfect for busy family dinners.

  • 1 whole chicken (34 pounds)
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 onion, quartered
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
  2. Season the chicken with salt, pepper, garlic powder, and dried thyme.
  3. Sear the chicken in the skillet on all sides until golden brown.
  4. Chop the carrots and potatoes; quarter the onion.
  5. Add the vegetables to the slow cooker.
  6. Place the seared chicken on top of the vegetables.
  7. Pour chicken broth over the chicken and vegetables.
  8. Cook on low for 6 to 8 hours until chicken is tender.
  9. Remove the chicken and serve it with vegetables and broth.

Notes

Serve with crusty bread or over rice. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2-3 months.
