  • Red or pink food coloring (optional)

  • ½ teaspoon almond extract (optional)

For the Filling:
  • ½ cup (113g) unsalted butter, softened

  • 2 cups (240g) powdered sugar

  • 2 tablespoons heavy cream

  • 1 teaspoon vanilla or almond extract

  • Red or pink food coloring (optional)

  • ¼ cup strawberry or raspberry jam (optional)

Optional Decorations:
  • Sprinkles, sanding sugar, or mini heart-shaped candies

  • Melted white or dark chocolate for drizzling

  • Edible glitter or colored sugar dust

  • Crushed freeze-dried strawberries

Instructions

  1. Prepare the Dough: In a bowl, cream butter and sugar until light and fluffy. Add egg and vanilla extract. In another bowl, whisk together flour, baking powder, and salt. Gradually mix dry ingredients into wet ingredients. Add food coloring if desired. Chill dough for 30 minutes.

  2. Roll and Cut the Cookies: Preheat oven to 350°F (175°C). Roll out dough to ¼-inch thickness on a floured surface. Use a heart-shaped cookie cutter to cut an even number of cookies. For half the cookies, cut a smaller heart shape in the center.

  3. Bake the Cookies: Place cookies on a parchment-lined baking sheet and bake for 8-10 minutes until edges are lightly golden. Let cool completely.

  4. Make the Filling: Beat butter until creamy. Gradually add powdered sugar and mix until smooth. Add heavy cream and extract, beating until fluffy. Mix in food coloring if desired.

  5. Assemble the Cookies: Spread filling onto the flat side of a whole cookie. Top with a cut-out cookie, gently pressing together.

  6. Decorate: Dust with powdered sugar, drizzle with melted chocolate, or add sprinkles.

Notes

Chill the dough to prevent spreading.

For softer cookies, slightly underbake and store in an airtight container.
