Easy Zucchini Bread with Walnuts

A comforting and easy recipe for zucchini bread that includes walnuts and is perfect for using up excess zucchini.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 2 large eggs
  • 1 cup sugar (brown or white)
  • 1/2 cup oil
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (not peeled)
  • 1 cup chopped walnuts (or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the dry ingredients: flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the eggs, sugar, oil, and vanilla extract.
  4. Stir in the grated zucchini and chopped walnuts into the wet mixture.
  5. Combine the wet and dry ingredients, mixing gently until just combined.
  6. Spoon the batter into the prepared loaf pan.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Avoid squeezing the zucchini too much; it should retain some moisture. Feel free to substitute walnuts with pecans or chocolate chips for a twist.
