  • For the Pie Crust:
    • 1 store-bought or homemade 9-inch pie crust
  • For the Custard Filling:
    • 1 cup (200g) granulated sugar
    • 2 tablespoons all-purpose flour
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground nutmeg (plus extra for garnish)
    • 4 large eggs
    • 2 tablespoons unsalted butter, melted
    • 2 cups whole milk
    • 1 tablespoon vanilla extract

Instructions

  1. Preheat & Prepare the Crust: Preheat oven to 350°F (175°C). Butter a 9-inch pie dish. Roll out the dough, place it into the dish, and crimp the edges. Freeze for 15 minutes to prevent shrinking.
  2. Blind Bake: Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 45-50 minutes until lightly golden. Remove weights and cool slightly. Reduce oven temperature to 325°F (165°C).
  3. Make the Custard Filling: In a large bowl, whisk sugar, flour, salt, and nutmeg. Add eggs and whisk until smooth. Stir in melted butter, milk, and vanilla. For a silkier texture, strain through a fine mesh sieve.
  4. Assemble & Bake: Place pie dish on a baking sheet. Pour custard into the crust. Bake for 50-60 minutes, until edges are set but center slightly jiggles. An instant-read thermometer should read 170°F-175°F.
  5. Cool & Serve: Cool to room temperature on a wire rack, then chill for at least 2 hours before serving. Garnish with nutmeg and enjoy!
