Elderberry Lemon Tart

A delightful dessert combining sweet elderberries and tangy lemons, perfect for any occasion.

Ingredients

  • 2 cups almonds
  • 1 cup pitted dates
  • 34 tablespoons of water
  • Small pinch Himalayan salt
  • 1 cup elderberry juice
  • 0.5 cup lemon juice
  • 4 egg yolks
  • 2 eggs
  • 1 cup raw sugar
  • 9 tablespoons melted unsalted butter
  • Blueberries, blackberries, black grapes, figs (for decoration)

Instructions

  1. Soak the dates in 2 tablespoons of hot water until soft.
  2. Blend almonds with 0.5 teaspoon Himalayan salt to breadcrumb size.
  3. Add soaked dates and 1 tablespoon of water to the almonds and pulse until combined.
  4. Spread the mixture into a lined tart tin, pressing firmly.
  5. Simmer elderberries with 0.5 cup of water for 20 minutes to release juice.
  6. Strain the berries to extract 2 cups of juice.
  7. Mix lemon juice and elderberry juice in a small saucepan and heat.
  8. Whisk eggs and yolks until fluffy, gradually adding raw sugar.
  9. Temper the egg mixture with hot fruit juice, then return to saucepan and cook until thickened.
  10. Stir in melted butter and cool slightly.
  11. Pour filling over the crust and chill in the fridge for at least 2 hours.
  12. Decorate with fresh fruits before serving.

Notes

Serve with whipped cream or ice cream for added richness. Can be customized with different nuts or juices.
