Eta Cilantro Bowl with Chicken

A vibrant and flavorful bowl combining fresh cilantro, tender chicken, and a medley of vegetables, perfect for a healthy meal.

  • 1 cup fresh cilantro, chopped
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 can black beans, rinsed
  • 1 avocado, sliced
  • 1/2 red onion, diced
  • 1 lime, juiced
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup long-grain rice (jasmine or basmati)
  • 2 tablespoons olive oil for marinating

Instructions

  1. Marinate the chicken with olive oil, lime juice, cumin, paprika, salt, and pepper. Let it sit for at least 30 minutes.
  2. Cook the rice according to package instructions. Rinse before cooking for fluffy rice.
  3. Once the rice is cooked, mix in chopped cilantro and lime juice.
  4. Prepare the chicken by grilling or sautéing until cooked through. Let it rest before slicing.
  5. Assemble the bowl starting with a base of cilantro rice, adding sliced chicken, bell peppers, corn, black beans, red onion, and avocado.
  6. Garnish with cheese, sour cream, extra cilantro, and a squeeze of lime juice.

Notes

For extra flavor, consider using chicken broth instead of water for cooking rice. You can also customize your bowl with additional vegetables.
