Fall-Apart Balsamic Beef with Cranberry Glaze

A warm, comforting dish featuring tender beef in a sweet and tangy balsamic cranberry glaze. Perfect for family dinners or gatherings.

  • 34 pounds beef chuck roast
  • 1 cup balsamic vinegar
  • 1 cup cranberry sauce
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef chuck roast with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat and sear the roast on all sides until browned.
  3. In a bowl, mix balsamic vinegar, cranberry sauce, brown sugar, chopped onion, and minced garlic.
  4. Pour the mixture over the seared roast in the Dutch oven.
  5. Cover and place in the oven for 3-4 hours or until the beef is tender and falls apart easily.
  6. Remove the roast, shred the beef, and return it to the glaze, mixing well.
  7. Serve hot, garnished with fresh rosemary if desired.

Notes

Serve the beef over rice or mashed potatoes to soak up the delicious glaze. This dish also works great in sandwiches.
