Feta Cilantro Bowl with Chicken Breast

A delightful bowl combining succulent chicken breast with fresh cilantro and creamy feta cheese, perfect for dinner or meal prep.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup crumbled feta cheese
  • 1 cup fresh cilantro leaves, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup cooked quinoa or brown rice
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • Salt and pepper to taste

  • 1 teaspoon dried oregano (for marinade)
  • 1 teaspoon paprika (for marinade)

Instructions

  1. To marinate the chicken, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, 2 minced garlic cloves, oregano, paprika, salt, and pepper.
  2. Place chicken in a bag or dish, pour marinade over, and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high. Remove chicken from marinade and grill for 6-7 minutes per side until cooked through. Alternatively, preheat oven to 375°F and bake for 20-25 minutes.
  4. While cooking, prepare vegetables and grains according to package instructions. Let cool slightly.
  5. Combine dressing ingredients in a bowl, whisk until smooth.
  6. To assemble, start with a base of grains, layer sliced chicken on top, add vegetables, sprinkle feta, and drizzle with dressing.
