Feta Cilantro Bowl with Chicken and Potatoes

  • 2 boneless, skinless chicken breasts
  • 4 medium-sized potatoes
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1 cup quinoa or rice
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Optional: 1 cup cherry tomatoes
  • Optional: 1 avocado
  • Optional: 1/4 cup thinly sliced red onion
  • Optional: Tzatziki sauce

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dice the potatoes, then toss with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet and roast for 20-25 minutes.
  4. Meanwhile, season the chicken breasts with olive oil, paprika, garlic powder, cumin, salt, and pepper.
  5. Cook chicken in the oven for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  6. Once the chicken and potatoes are cooked, let them rest.
  7. In each bowl, add a base of cooked quinoa or rice.
  8. Top with sliced chicken, roasted potatoes, crumbled feta, chopped cilantro, and other fresh toppings as desired.
  9. Finish with tzatziki sauce if using.

Notes

Feel free to mix and match ingredients based on personal preferences. This bowl can be made vegetarian by replacing chicken with chickpeas or tofu.
