Fiesta in a Pan

A quick and delicious one-pan meal full of flavor and color, perfect for busy weeknights or gatherings.

Ingredients

  • 1 lb ground beef (or chicken)
  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained)
  • 1 bell pepper (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese
  • Tortilla chips (for serving)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned.
  2. Add the onion, bell pepper, and garlic; sauté until soft.
  3. Stir in the black beans, corn, taco seasoning, and salsa; mix well.
  4. Cook for an additional 5-7 minutes until heated through.
  5. Sprinkle shredded cheese on top and cover until melted.
  6. Serve warm with tortilla chips.

Notes

Customize with your favorite toppings and sides. Leftovers can be stored in an airtight container for 3-4 days.
