  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar (or honey)
  • 1 1/2 tbsp baking powder
  • 3/4 tsp salt
  • 1 1/2 cups whole milk (or buttermilk)
  • 3 large eggs
  • 1/3 cup unsalted butter, melted
  • 1/3 cup vegetable oil
  • 3/4 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 cup fresh or frozen corn kernels (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking pan or line with parchment paper.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the milk, eggs, melted butter, oil, and sour cream until smooth.
  4. Gradually stir wet ingredients into dry ingredients until just combined. Fold in any add-ins if desired.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool for 5-10 minutes before slicing. Serve warm with butter or honey.

Notes

For extra moisture, use sour cream or buttermilk. Don’t overbake to keep it tender and soft.
