Frankenstein Cheesecake

A fun and creative cheesecake perfect for Halloween, featuring a chocolate cookie crust and vibrant green filling decorated to resemble Frankenstein.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • Green food coloring
  • Candy eyes
  • Black gel icing for details

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Grease a 9-inch springform pan.
  3. In a bowl, mix the chocolate cookie crumbs and melted butter until well combined and press firmly into the bottom of the pan.
  4. In another bowl, beat the cream cheese, sugar, vanilla extract, and green food coloring until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the filling over the crust and smooth the top.
  7. Bake for 50-55 minutes, until the edges are set but the center is slightly jiggly.
  8. Let cool completely, then refrigerate for at least 4 hours or overnight.
  9. Decorate with candy eyes and black gel icing before slicing and serving.

Notes

Use room temperature ingredients for a smooth texture. Avoid overmixing the batter after adding eggs to keep the cheesecake light.
