French Onion Pot Roast

A delightful dish featuring caramelized onions and tender beef, perfect for family gatherings or chilly evenings.

  • 3 lbs beef chuck roast
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup dry white wine
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until they are caramelized and golden brown, about 20-25 minutes. Stir occasionally to prevent burning.
  2. Season the beef chuck roast with salt and pepper. In the same skillet, sear the beef on all sides until browned.
  3. In a slow cooker, combine caramelized onions, minced garlic, beef broth, white wine, Worcestershire sauce, and the seared beef.
  4. Cover and cook on low for 6-8 hours, or until the beef is fall-apart tender.
  5. Serve hot, garnished with fresh thyme.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
