French Onion Pot Roast

A comforting dish combining pot roast with the sweet and savory flavors of French onion soup, perfect for family dinners.

  • 34 lb chuck roast
  • Kosher salt and pepper (to taste)
  • 3 Tablespoons butter (or coconut oil)
  • 4 large yellow onions (halved through root end and thinly sliced)
  • 4 cloves garlic (minced)
  • 2 Tablespoons balsamic vinegar
  • 2/3 cup dry white wine (such as Pinot Grigio)
  • 3/4 cup low sodium beef broth
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 2 Tablespoons cornstarch
  • 2 Tablespoons water
  • 8 oz French baguette (sliced, optional)
  • 4 oz gruyere cheese (optional)

Instructions

  1. Season both sides of the chuck roast generously with salt and pepper. Sear both sides in a skillet over high heat for 4-5 minutes until golden brown, then transfer to the slow cooker.
  2. Melt butter in the same skillet, add sliced onions, and cook for 15 minutes until golden. Stir in balsamic vinegar and minced garlic; cook for an additional 5 minutes. Add white wine and cook until reduced, about 5 minutes.
  3. Transfer the caramelized onions to the slow cooker, pour in beef broth, and add thyme and bay leaves. Cover and cook on low for 8-10 hours until the beef is tender.
  4. For optional baguette, preheat oven to 500°F (260°C). Drizzle baguette slices with olive oil and bake for 5 minutes.
  5. Remove thyme and bay leaves from cooker. Shred beef with forks and stir in a mixture of cornstarch and water. If using, top with toasted bread and gruyere cheese, then cover and cook on high for another 5-10 minutes until cheese melts.

Notes

Serve warm with toasted baguette and cheese on top for a delightful meal.
