Fresh Mint Sun Tea

A light and refreshing iced tea made with fresh mint and water, perfect for hot days.

Ingredients

  • 2 cups fresh, roughly chopped peppermint
  • 1/2 gallon fresh, filtered water
  • Pinch of powdered stevia (or raw honey, to taste)

Instructions

  1. Roughly chop the fresh mint and place it in a half-gallon jar (or 2 quart-size jars).
  2. Fill the jar(s) with fresh, filtered water.
  3. Place a lid on the jar(s).
  4. Put outside in the sun and let it steep all day, or overnight for a stronger flavor.
  5. Strain and press the last drops of water out of the mint leaves, then sweeten if desired.
  6. Enjoy over ice and store any leftovers in the fridge.

Notes

Serve over ice and add a mint sprig or lemon wheel for garnish. If using honey, remember it adds calories.
