Watermelon Feta Bites

Refreshing and simple summer bites combining juicy watermelon and creamy feta, garnished with fresh mint.

Ingredients

  • Fresh seedless watermelon
  • Feta cheese (brined)
  • Fresh mint leaves
  • Olive oil (optional)
  • Fresh cracked black pepper
  • Toothpicks or cocktail sticks
  • Balsamic glaze or honey (optional)

Instructions

  1. Cube the watermelon into pieces large enough to hold the feta on top.
  2. Top each watermelon cube with a piece of feta.
  3. Add a mint leaf on top of the feta.
  4. Drizzle with olive oil and sprinkle with black pepper, if desired.
  5. Serve immediately or within a couple of hours of assembling.

Notes

Best served chilled, arrange on a platter with extra mint and small bowls of balsamic glaze or honey on the side for drizzling.
