Gingerbread Cake with Cream Cheese Frosting

A delightful and moist gingerbread cake topped with creamy cream cheese frosting, perfect for holiday gatherings and festive occasions.

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1 cup hot water
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking soda, salt, ground ginger, ground cinnamon, and ground cloves.
  3. In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar until fluffy and light.
  4. Add the eggs one at a time to the butter mixture, mixing well after each addition. Then, mix in the molasses until combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the hot water. Mix just until combined, being careful not to overmix.
  6. Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes. Transfer them to wire racks to cool completely.
  8. For the cream cheese frosting, beat the softened cream cheese and butter together in a mixing bowl until smooth. Gradually add the powdered sugar and vanilla extract, mixing until you reach your desired consistency.
  9. Once the cakes are completely cooled, frost the top of one layer with cream cheese frosting. Place the second layer on top and frost the top and sides of the cake. Serve and enjoy!

Notes

For added decoration, you can sprinkle ground cinnamon or crushed nuts on top of the frosting.
