Gingerbread Cheesecake Cookie Cups

Delightful cookie cups featuring a gingerbread base and a creamy cheesecake filling, perfect for holiday gatherings.

  • 2 1/4 cups all-purpose flour
  • 2 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of cloves
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 2/3 cup packed brown sugar
  • 1 large egg
  • 3 tbsp molasses
  • 12 oz cream cheese, room temperature
  • 1 3/4 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (176°C) and spray a cupcake or muffin pan with non-stick spray.
  2. In a medium bowl, combine the flour, ground ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Mix well to combine the dry ingredients evenly.
  3. In a large mixing bowl, add the softened butter and packed brown sugar. Beat them together for about 2-3 minutes, until the mixture is light in color and fluffy.
  4. Add the egg and molasses to the butter and sugar mixture. Mix until everything is well combined.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined; be careful not to over mix.
  6. Take about 2 tablespoons of the cookie dough and make balls. Press each ball into the bottom and halfway up the sides of each cupcake cup.
  7. Bake in the preheated oven for 8-10 minutes, or until the edges are just starting to turn golden.
  8. Allow the cookie cups to cool for about 10 minutes in the pan.
  9. While they cool, prepare the cheesecake filling. In a mixing bowl, mix together the cream cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth.
  10. Once the cookie cups are cool, pipe or scoop the cheesecake filling into each cup.
  11. Top with sprinkles if you like, and store the cookie cups in an airtight container in the refrigerator until you’re ready to serve.

Notes

Gingerbread Cheesecake Cookie Cups are easy to make and wonderfully festive. They can be stored in the refrigerator for up to 5 days.
