Golden Caramelized Pear & Burrata Towers

  • 3 firm pears (Corella or Beurre Bosc)
  • 2 cups water
  • 1/2 cup brown sugar
  • 1 cinnamon stick
  • 1 vanilla bean, split
  • 1 strip lemon zest

Instructions

  1. In a pot, combine the water, brown sugar, cinnamon stick, vanilla bean, and lemon zest.
  2. Bring to a simmer, stirring until the sugar dissolves.
  3. Add the pears and poach for about 15-20 minutes until tender.
  4. Remove pears from syrup and let cool.
  5. Slice the pears and layer them with burrata cheese on a plate.
  6. Drizzle with some of the poaching syrup for a glossy finish.
  7. Serve as a dessert.
