Greek Chicken Bowls

A colorful and healthy dish combining grilled chicken, fresh vegetables, and creamy tzatziki sauce over a bed of quinoa or rice.

Ingredients

  • 2 cups cooked quinoa or rice
  • 4 chicken breasts, grilled and diced
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh spinach or mixed greens
  • Olive oil
  • Salt and pepper to taste
  • For the tzatziki sauce:
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. In a large bowl, combine the cooked quinoa or rice, grilled chicken, diced cucumber, cherry tomatoes, red onion, bell pepper, olives, and feta cheese.
  2. Drizzle with olive oil and season with salt and pepper. Toss to combine.
  3. For the tzatziki sauce, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a separate bowl.
  4. Serve the chicken bowl over a bed of spinach or mixed greens and top with tzatziki sauce.

Notes

Feel free to customize the bowls by swapping proteins or adding more vegetables based on your preference.
