Greek Chicken Tzatziki Bowls

Vibrant and satisfying Greek Chicken Tzatziki Bowls loaded with juicy roasted chicken, fresh veggies, and creamy tzatziki sauce.

  • 1/3 cup full-fat plain Greek yogurt
  • 1/4 cup extra virgin olive oil
  • 1.5 lbs boneless, skinless chicken breasts or thighs (cubed)
  • 6 garlic cloves, minced
  • 2 shallots, chopped
  • 1 tbsp smoked paprika
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • Chili flakes, kosher salt, and black pepper to taste
  • 2 Persian cucumbers, chopped
  • 1 avocado, diced
  • 2 tbsp lemon juice
  • 1/4 cup fresh dill, chopped
  • 6 oz crumbled feta cheese
  • Lettuce, cherry tomatoes, sliced red onion, peperoncini, warm pita
  • 1/2 cup tahini
  • 2 tsp fresh grated ginger
  • 1 garlic clove, grated
  • 2 tsp tamari
  • 1 tbsp lemon juice
  • 2 tsp honey
  • 1/4 cup water (adjust as needed)

Instructions

  1. In a bowl, mix yogurt, olive oil, garlic, shallots, paprika, oregano, and spices. Add the chicken and toss to coat. Marinate at least 15 minutes (or overnight for best flavor).
  2. Preheat oven to 425°F. Spread the marinated chicken on a baking sheet and roast for 15–20 minutes. Broil for an additional 1–2 minutes to get crispy, charred edges.
  3. Combine chopped cucumbers, avocado, lemon juice, dill, and a pinch of salt and pepper.
  4. Blend tahini, ginger, garlic, lemon juice, tamari, honey, and water until smooth and pourable. Adjust water for desired consistency.
  5. Layer a bed of lettuce in each bowl. Add roasted chicken, cucumber-avocado mix, crumbled feta, tomatoes, onions, and peperoncini. Top with dollops of tzatziki and a drizzle of ginger tahini.

Notes

These bowls can be customized with shrimp or grains, and sauces can be made ahead and stored.
