Grilled Honey Lime Chicken

A delightful dish that combines sweet honey, tangy lime, and savory soy sauce for a mouthwatering grilled chicken experience.

  • ⅓ cup low-sodium soy sauce
  • 2 whole limes (juiced and zested)
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 pound bone-in, skin-on chicken drumsticks

Instructions

  1. Prepare the Marinade: Whisk together honey, soy sauce, lime juice, lime zest, and crushed red pepper flakes.
  2. Marinate the Chicken: Place chicken drumsticks in a Ziplock bag, pour marinade over, seal, and refrigerate for at least 4 hours or overnight.
  3. Preheat the Grill: Heat the grill to 400°F.
  4. Grill the Chicken: Remove drumsticks from marinade, grill for 30-35 minutes or until the internal temperature reaches 165°F, rotating every 8-10 minutes.
  5. Prepare the Sauce: Boil remaining marinade in a saucepan for 8-10 minutes until thickened.
  6. Glaze the Chicken: Brush chicken with reduced marinade in the last 2-3 minutes of grilling.
  7. Serve: Remove from grill, brush with remaining sauce, and serve hot.
