Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Sauce

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced

Instructions

  1. In a bowl, toss shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Marinate for 15-20 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the shrimp for 2-3 minutes on each side or until cooked through.
  4. To make the corn salsa, combine the thawed corn, red onion, cilantro, jalapeño, and lime juice in a bowl. Mix well.
  5. Serve the grilled shrimp in a bowl topped with corn salsa and a drizzle of creamy sauce (optional).

Notes

To enhance the dining experience, serve with fluffy rice or a bed of greens. Leftovers can be stored in airtight containers in the refrigerator for up to 2 days.
