Guinness Beef Stew

A hearty Irish-inspired stew made with tender beef and rich flavors from Guinness stout, packed with vegetables and herbs.

  • 34 lbs beef chuck roast
  • 1 bottle Guinness stout
  • 4 large carrots, chopped
  • 2 yellow onions, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 large potatoes, cubed
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides, about 5 minutes per batch. Remove beef and set aside.
  2. In the same pot, sauté onions and garlic until onions are translucent.
  3. Deglaze the pot with Guinness stout, scraping up any brown bits.
  4. Add carrots, potatoes, thyme, bay leaves, and beef broth; bring to a gentle simmer.
  5. Cover and cook on low heat for 120-180 minutes until the meat is fork-tender.
  6. Remove bay leaves before serving. Enjoy with crusty bread or mashed potatoes.

Notes

For best flavor, make a day ahead and let it sit in the refrigerator overnight. Serve with crusty bread or creamy mashed potatoes.
