Halloween Cake Mix Cookies

  • 16.25 oz white cake mix (1 box)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • Orange gel food coloring
  • 1/4 cup Halloween sprinkles
  • 48 candy eyes

Instructions

  1. Preheat the oven to 350°F and line your cookie sheets with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, and vegetable oil, mixing until smooth.
  3. Add orange gel food coloring and mix until desired color is achieved.
  4. Gently fold in the Halloween sprinkles.
  5. Scoop the dough onto the prepared cookie sheets, spacing them at least 2 inches apart.
  6. Sprinkle extra Halloween sprinkles on top and press them down into the dough.
  7. Bake for 9 to 12 minutes until lightly golden around the edges.
  8. Let cool for 3 minutes, then press a candy eye into the center of each cookie before transferring them to a cooling rack.

Notes

Store cookies covered or in an airtight container for up to 5 days; can be frozen for up to 2 months.
