Haunted Hibiscus Punch Mocktail

A vibrant, non-alcoholic mocktail that blends hibiscus tea, pineapple, and lime for a refreshing drink perfect for any occasion.

  • 2 cups boiling water
  • 3 hibiscus tea bags or 2 tbsp dried hibiscus flowers
  • 1/2 cup sugar (or more to taste)
  • 1 1/2 cups pineapple juice (chilled)
  • 1/4 cup fresh lime juice (or lemon juice)
  • 1/2 cup blackberries or raspberries (optional)
  • 12 inches fresh ginger (peeled and sliced)
  • 2 cups sparkling water (lemon-lime soda, or ginger ale)
  • Handful fresh mint leaves (plus more for garnish)
  • Pineapple slices, lime wheels, or edible hibiscus flowers (for garnish)
  • Ice cubes (for serving)

Instructions

  1. In a saucepan, bring 2 cups of water to a boil.
  2. Remove from heat; add hibiscus tea bags or dried hibiscus flowers and sliced ginger.
  3. Let steep for 8–10 minutes.
  4. Strain out the flowers/tea bags and sliced ginger.
  5. While the tea is still warm, stir in the sugar until dissolved.
  6. Allow the tea to cool down to room temperature.
  7. In a large pitcher, muddle the mint leaves with the berries (if you choose to use them) using a muddler or the back of a spoon.
  8. Pour in the cooled hibiscus tea, pineapple juice, and lime juice. Stir well to combine all the flavors.
  9. Fill each serving glass with ice and pour in the hibiscus punch mixture.
  10. Top off each glass with a splash of sparkling water, lemon-lime soda, or ginger ale.
  11. Garnish each drink with mint leaves, lime wheels, pineapple, or hibiscus flowers.
  12. Serve immediately while the drink is chilled and fizzy.

Notes

Serve in tall, clear glasses to showcase the vibrant color. Best enjoyed fresh for optimal flavor and carbonation.
